Wonton & Chicken Noodle Soup with Asian Greens

Ingredients:

  • 5 Garlic Cloves
  • 1 Tsp Black peppercorns
  • 4cm Ginger pieces, roughly chopped
  • 2 Tbsp Vegetable Oil
  • 4 Star Anise (whole)
  • 6 cups Bone Roasters Chicken Stock
  • 3 Tbsp Soy Sauce
  • 1 Tbsp Sea Salt
  • 150g Asian Greens (e.g. Bok Choy) blanched
  • 4 Chicken Wonton (pre-made/store brought)
  • 2 Spring Onions (thinly sliced)

Method

  • Place garlic, peppercorns and ginger into a mortar and pestle. Grind until it becomes a rough paste.
  • Heat oil in a large pot over high heat and fry the paste for 1 minute until fragrant.
  • Add the star anise, Bone Roasters Chicken Stock and soy sauce. Bring to a simmer, then lower heat, gently simmering for another 30 minutes
  • Divide the Asian greens among serving bowls
  • Cook wontons in boiling water for 5 minutes or until cooked through. Drain and divide wontons among serving bowls. Strain the stock and ladle over the top.
